This Uzbek student food is actually an improvised recipe. My Uzbek husband made it up when he was a student and made ends meet. Like many students, he had to be cautious of his expenditure and needed ingredients that would be fulfilling with a long life span.

Why Potatoes & Eggs are the perfect student food

Potatoes and eggs are incredibly economical and budget-friendly options for students looking to stretch their food budget. Both potatoes and eggs are versatile, nutritious, and affordable. Potatoes can be purchased in bulk at a low cost and provide a great source of carbohydrates and fibre. They can be prepared in various ways, such as mashed, roasted, or boiled, offering endless possibilities for meals.

Eggs are also a cost-effective protein source, packed with essential nutrients. They can be cooked in multiple ways, such as scrambled, boiled, or fried, making them versatile ingredients that can be incorporated into various dishes.

Whether combined together for a hearty breakfast or used separately in different meals, potatoes and eggs provide students with affordable, nutritious options that help them make the most of their budget while still enjoying satisfying and delicious meals.
