A Versatile Uzbek Breakfast Recipe
The best thing about this recipe is, despite many Uzbek students cooking it, it’s actually still completely made up. So, you can add or take away whatever you want.
As funny as it may seem, we have actually gotten used to this mishmash breakfast now lol, we are not students or broke but we still make sure to enjoy it every once in a while and maybe you should too!
Ingredients for Uzbek Student Food
- 4 tbsp vegetable oil
- 1 large Onion or 2 small ones
- 5 medium potatoes
- 5 eggs
- Salt & pepper to taste
- 1 tsp cumin
How to make Uzbek Student Food
- Peel and wash the potatoes then quarter, slice then set aside.
- Peel, wash and slice the onion long.
- Heat the oil in a deep pan and add the onions to soften slightly before adding the potatoes.
- Add the spices, then stir fry together for about 5-10 mins.
- Crack the eggs in a bowl and whisk with a fork, then pour over the potatoes.
- Stir-fry the egg into the mix for a good few minutes before turning it down to low heat.
- Cover the pan and let simmer for about 15min or until the potatoes have softened.
