  • 2 medium or 3 small potatoes peeled and diced
  • 4 cups vegetable broth
  • 1 cup water
  • 2 bay leaves
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat. Add the leeks and garlic, cooking until softened, about 5 minutes.
