This Uzbek student food is actually an improvised recipe. My Uzbek husband made it up when he was a student and made ends meet. Like many students, he had to be cautious of his expenditure and needed ingredients that would be fulfilling with a long life span.The best thing about this recipe is, despite many Uzbek students cooking it, it's actually still completely made up. So, you can add or take away whatever you want.As funny as it may seem, we have actually gotten used to this mishmash breakfast now lol, we are not students or broke but we still make sure to enjoy it every once in a while and maybe you should too!

Ingredients
4tbspvegetable oil
1large onion or 2 small onessliced
5medium potatoespeeled, quartered & sliced
5eggswhisked
salt & pepper to taste
1tspcumin
Instructions
Peel and wash the potatoes then quarter, slice then set aside.
Peel, wash and slice the onion long.
Heat the oil in a deep pan and add the onions to soften slightly before adding the potatoes.
Add the spices, then stir fry together for about 5-10 mins.
Crack the eggs in a bowl and whisk with a fork, then pour over the potatoes.
Stir-fry the egg into the mix for a good few minutes before turning it down to low heat.
Cover the pan and let simmer for about 15 min or until the potatoes have softened.
