Moroccan Fruit and Nut Cake

This cake is most popular during the month of Ramadan due to its high protein ingredients such as almonds, walnuts, pecans, dates, figs and bananas which are really important for keeping energy levels high during long fasting days. It's not limited to these fruit & nuts, you may choose another type of fruit or nut and adapt it to your preference or what you have available.

  • 1 cup Self-raising flour
  • 3/4 cup Sugar
  • 4 Medium eggs
  • 1 tsp Baking powder
  • 1 tsp Vanilla sugar powder or essence
  • 2 Sliced bananas
  • 2 Sliced apples
  • ½ cup Roasted Almonds
  • ½ cup Raisins
  • 2-3 Sliced Apricots
  • Icing Sugar for dusting
